The best choice of flour for this bread pudding isalmond flour. It gives it that perfectbread-like texturewithout packing on the carbs.

But, if you're allergic to almonds or don't want to use almond flour, the best substitutes for it arewalnut flourandsunflower seed flour. They're just as low carb and can be swapped in at an equal ratio.

  3. Pour the bread batter into your prepared loaf pan and bake for around 40-45 minutes (or until a toothpick inserted in the center comes out clean). Once baked, set it aside and let it cool.
  4. After the loaf has cooled, tear it into pieces and place them in a casserole dish.
  5. In another bowl, whisk together all the pudding ingredients. Pour the pudding mixture onto the bread pieces in the casserole dish and bake at 350°F (180°C) for 45 minutes.
  6. Take out of the oven when done and sprinkle the top with extra cinnamon.
